    • Ammonia Process: Catalyzed by ammonium salts, specialized for acidic beverages like cola, achieving high color intensity (>20,000 EBC).
    • Ammonium Sulfite Process: Catalyzed by sulfites + ammonium compounds, produces high-intensity products (e.g., double-strength caramel color) with doubled color strength[()].
  • Advantages:
